Can I refreeze Skylark Liver?
We do not recommend refreezing liver because it will lose taste and moisture.  But, yes you can refreeze liver as long as it has been refrigerated.

What are the nutritional benefits of liver? 
There are numerous nutritional benefits of liver. A 3.5 oz serving of liver is rich in protein with only 3.5 grams of fat (that’s only 1% calories from fat!) – and is a good, natural source of the following vitamins and minerals:

  • Vitamin B12: 988% of the RDI (recommended daily intake). Vitamin B12 helps the formation of red blood cells and DNA, and is also involved in healthy brain function.
  • Vitamin A: 340% of the RDI. Vitamin A is important for normal vision, immune function and reproduction. It also helps organs like the heart and kidneys function properly.
  • Riboflavin (B2): 160% of the RDI. Riboflavin is important for cellular development and function, and helps turn food into energy.
  • Folate (B9): 160% of the RDI. Folate is an essential nutrient that plays a role in cell growth and the formation of DNA.
  • Iron: 30% of the RDI, or 35% for women of menstruating age. Iron is another essential nutrient that helps carry oxygen around the body. The iron in liver is heme iron, the kind most easily absorbed by the body.
  • Copper: 480% of the RDI. Copper acts as a key to activate a number of enzymes, which then help regulate energy production, iron metabolism and brain function.
  • Choline: Liver provides all of the Adequate Intake (AI) for women and nearly all of it for men. Choline is important for brain development and liver function

What color should liver be when its cooked? 
Cook liver over medium/medium well heat until you don’t see the red liquid, be careful not to overcook.

What’s the best way to cook liver? 
The best way to cook liver is in a saucepan or skillet.

What’s the best way to reheat liver? 
In a saucepan with a sauce is the best way to reheat beef liver.

How long do I cook liver? 
Liver is best when it’s cooked to a temperature between 145°F and 160°F, visibly pink and juicy when cut. How long it takes to reach that temperature varies depending on the cooking method and the thickness of the slices. Quarter-inch slices can be pan-fried to that doneness in just a few minutes. Use a thermometer to accurately confirm the internal temperature of the liver. 

Cooking tips:
If the liver has a slight metallic taste the liver is not cooked enough. If the liver is dry, chewy and strong flavored, the liver was cooked too long and shed all of its moisture.

Is liver gluten-free? 
Unless you bread it, yes liver is gluten-free.

Is liver lactose-free? 
Unless you soak it in milk, yes liver is lactose-free.

Is there protein in liver? 
A 4 ounce serving of beef liver has 23 grams of protein.

Is liver healthy? 
Beef liver is nature’s most potent superfood. It is an excellent source of protein and minerals with only 150 calories per serving. It is a good natural source of Iron and Zinc, and a very good source of Protein, Vitamin A, Riboflavin, Niacin, Vitamin B6, Folate, Vitamin B12, Pantothenic Acid, Phosphorus, Copper and Selenium.

How long can I keep my liver before I cook it?
The refrigerated shelf life of liver is 2-4 days. The frozen shelf life of liver is 12 months.
