Tender Red Wine Braised Instant Pot Beef Shanks

Prep time: 30 mins | Cooking time: 1 hour 

Ingredients:

  • 1 bag Skylark Beef Shanks, thawed (2 lbs.)  

  • 2 Tbsp. olive oil

  • 1 cup onion, ½” dice

  • Tbsp. fresh garlic, minced

  • ¾ cup carrots, ½ moon slice

  • 2 tsp. fresh rosemary, minced

  • 2 tsp. Kosher salt

  • 2 tsp. ground black pepper

  • 2 tsp. onion powder

  • 2 tsp. smoked paprika

  • ½ cup red wine

  • ¼ cup soy sauce    

  • 2 Tbsp. Worcestershire sauce

  • 2 cups water

  • 2 Tbsp. Better Than Bouillon beef base

  • 3 Tbsp. tomato paste

  • 8 oz. mushrooms, sliced

Instructions:

1. Select Sauté on the Instant Pot. Add the olive oil and heat until it shimmers.

2. Pat beef shanks dry. Brown shanks one at a time, cooking 1–2 minutes per side. Remove and set aside on a plate.

3. Add onion, garlic, carrots, and rosemary to the Instant Pot. Sauté 2–3 minutes, stirring frequently.

4. Add kosher salt, black pepper, onion powder, and smoked paprika. Sauté 1–2 minutes to bloom spices.

5. Pour in red wine. Deglaze the Instant Pot, scraping the bottom with a rubber spatula or wooden spoon.

6. Return the browned beef shanks to the Instant Pot.

7. In a separate bowl, combine soy sauce, Worcestershire sauce, water, beef base, and tomato paste. Add mixture to the Instant Pot.

8. Layer mushrooms evenly on top. Secure the Instant Pot lid. Set to Manual/Pressure Cook on high pressure for 45 minutes. Allow to naturally vent for 5 minutes, then release remaining pressure. Serve immediately, or cool, refrigerate, and reheat for later service.
