Soy-Braised Chicken Feet with Ginger and Chili

Ingredients:
1 bag chicken feet (2 lbs.)
1 Tbsp. cooking oil
8 cloves garlic, lightly crushed
8 thin slices fresh ginger
2 star anise
4 bay leaves
6–8 dried red chiles
2 tsp. Sichuan peppercorns
2 Tbsp. oyster sauce
2 Tbsp. light soy sauce
2 Tbsp. dark soy sauce
2 Tbsp. Shaoxing wine (or dry sherry)
1 tsp. sugar
2 tsp. honey
2 ¾ cup hot water
Instructions:
1. Trim the nails off the chicken feet, then wash thoroughly. Add to a large pot of water, bring to a boil, and simmer for about 5 minutes. Drain and pat dry.
2. Preheat air fryer to 390°F. Lightly coat the chicken feet with cooking oil, then place them in the basket. Cook for 10–12 minutes, shaking once or twice, until the skin blisters and turns golden. Transfer to a bowl of cold water and refrigerate for about 2 hours.
3. In a medium pot, heat cooking oil over medium heat. Add garlic, ginger, star anise, bay leaves, dried chiles, and Sichuan peppercorns. Sauté until fragrant and golden.
4. Stir in oyster sauce, soy sauces, Shaoxing wine (or dry sherry), sugar, and honey. Add the chicken feet and stir to coat evenly. Pour in hot water, bring to a boil, then reduce to a low heat. Cover and simmer for 30 minutes.
5. Remove the lid and increase to high heat. Let the sauce bubble and reduce until thick and glossy, turning the feet occasionally to coat.
6. Enjoy warm as a dim sum–style appetizer.
